Have you noticed all the “Marry Me” recipes floating around lately? There’s Marry Me Chicken, pasta versions, and all kinds of variations — but these Marry Me Butter Beans might honestly be one of my favorites yet.

I know, I know…..Butter Beans don’t always have the best reputation, but trust me on this one….I’m a foodie and this recipe will raise your eyebrows in a good way!

This recipe is rich, creamy, comforting, and completely plant-based. And before you decide beans on toast sounds a little unusual… trust me on this one. The flavor is absolutely phenomenal. Check it out here.

It’s the kind of recipe that feels cozy enough for a quiet dinner at home but also impressive enough to serve at a gathering with friends.

This recipe is also wonderfully flexible. No shallots? Use red or yellow onion. Don’t have butter beans? Cannellini Beans work beautifully too. 

Why These Beans Are So Good

The magic of this recipe is the combination of:

* creamy beans

* rich sun-dried tomatoes

* garlic and herbs

* a touch of coconut milk

* and nutritional yeast for that savory, cheesy flavor without dairy

It’s hearty and comforting while still feeling fresh and wholesome.

Step-by-Step Instructions

1. Chop the shallots, garlic, and tomatoes.

You want everything minced fairly small since this mixture will be spread onto toast.

I used the Electric Twist & Chop to make quick work of the shallots and sun-dried tomatoes. The smaller pieces blend beautifully into the beans and create so much flavor in every bite. 

2. Sauté the aromatics.

Melt your plant-based butter or oil in a saucepan, then add:

* shallots

* garlic

Cook until fragrant and softened.

Once the onions begin to brown slightly, stir in the sun-dried tomatoes and seasonings. The tomatoes help lift all that flavorful browned goodness from the bottom of the pan. 

3. Add the remaining ingredients.

Now stir in:

* butter beans with their liquid

* coconut milk

* tomato paste

* lemon juice

* nutritional yeast

The nutritional yeast gives the recipe an almost Parmesan-like flavor while keeping it dairy-free. It adds a rich savory taste that really makes this dish special. 

4. Simmer until creamy.

Once everything starts to simmer, cook for about 5 minutes, stirring occasionally so nothing sticks to the bottom.

The sauce thickens slightly and becomes creamy and rich while the flavors blend together beautifully. 

Toast Makes It Perfect

Serve the butter beans over toasted sourdough bread for the ultimate comfort meal.

The crispy toast paired with the creamy bean mixture is absolutely delicious. It’s simple food, but the flavor feels restaurant-worthy. 

And if you’re serving this for a gathering, keeping the beans warm in an insulated serving bowl works perfectly.

Bonus Idea: Turn Leftovers into Soup!

One thing I love about this recipe is how versatile it is.

If you have leftovers, simply add:

* vegetable broth for a plant-based soup

* or chicken broth if you prefer
