When your garden keeps giving you zucchini, this is one recipe you’ll want to make again and again!
Every summer I reach that point where I walk into the garden and think, “How did these zucchini get so big overnight?” If you grow zucchini, you know exactly what I mean!
I recently tried a roasted zucchini soup recipe from the SkinnyTaste website, and it was so good that I knew I had to share it with you. What made it even more special was that so many of the ingredients came straight from my own garden—the zucchini, fresh oregano, fresh thyme, and even the garlic. There is something incredibly satisfying about creating a meal with ingredients you’ve grown yourself.
If you’re looking for a healthy, creamy soup that’s packed with flavor but still feels light, this one is definitely worth making.
Why Roasting Makes All the Difference
Instead of cooking everything on the stovetop, this recipe starts by roasting nearly all of the ingredients together on a sheet pan (I used my Pampered Chef Stone Bar Pan).
The zucchini gets wonderfully tender, the garlic becomes sweet and mellow, and the feta cheese develops an amazing creamy texture. Best of all, everything cooks together, making cleanup simple.
Here’s How It Comes Together
Start by cutting your zucchini into large chunks. They don’t need to be perfect—just roughly bite-sized pieces that will roast evenly.
Next, cut an entire bulb of garlic in half horizontally. I find that a bread knife works beautifully for this because it easily saws through the bulb without crushing it.
Arrange the zucchini on your pan, drizzle everything with olive oil, and give it a quick toss.
One little trick I love is using my Oil & Vinegar Dispenser. It lets me measure the olive oil as I squeeze, so I don’t have to dirty measuring spoons.
Now comes the ingredient that surprises most people…
Place a block of feta cheese right in the center of the vegetables.
Yes, the whole block!
Nestle the garlic halves (cut side down) alongside the vegetables, season everything with a little salt and pepper, and lay fresh oregano and thyme sprigs across the top.
Then simply roast everything at 400°F for about 30 minutes.
The Best Part: Roasted Garlic
Once everything comes out of the oven, your kitchen smells incredible.
The fresh herbs have done their job, so you can remove those.
Let the garlic cool just enough to handle, then use a fork to gently mash each half. The roasted cloves slide right out without burning your fingers, and the flavor is absolutely amazing. Roasting transforms garlic from sharp and pungent into something rich, buttery, and slightly sweet.
Blend Until Smooth
Transfer the roasted zucchini, feta, garlic, and all those delicious pan juices into the Deluxe Cooking Blender.
Add chicken broth (or vegetable broth if you’d like to keep it vegetarian) and blend until completely smooth.
One thing I appreciate about this soup is how easy it is to customize.
- Prefer a thicker soup? Add a little less broth.
- Want it thinner? Simply pour in a little more.
- Enjoy it hot on a cool evening or chilled for lunch on a warm summer day.
It’s delicious either way.
A Simple Garnish
Pour the soup into bowls and, if you’d like, sprinkle a little extra feta over the top.
That’s it!
The roasted vegetables create an incredibly creamy texture without needing heavy cream, making this a lighter soup that still feels rich and satisfying.
Garden-to-Table at Its Best
One of my favorite parts of gardening is finding new ways to use what I’m harvesting. There’s something special about walking outside, picking fresh vegetables and herbs, and turning them into dinner just a short time later.
