Remember Salisbury steak from school lunches or family dinners growing up? I sure do! It’s one of those nostalgic comfort foods that brings back childhood memories. I don’t remember my mom making it very often, but I always looked forward to it when it showed up on the school lunch menu.
Today I’m sharing a shortcut that makes this classic weeknight dinner even easier. Pampered Chef’s Meatloaf Mix does most of the seasoning work for you, so you can have homemade Salisbury steak with rich mushroom gravy on the table without spending all evening in the kitchen.

Mix Once, Cook Twice
The Meatloaf Mix isn’t just for meatloaf! While I used it for Salisbury steak, the package also includes directions for making a traditional meatloaf. Simply combine it with lean ground beef, eggs, and milk, bake, and top with your favorite barbecue sauce.
For today’s recipe, I mixed:
- 2 pounds lean ground beef (93–95%)
- 2 eggs
- 1 package Meatloaf Mix
One of my favorite kitchen shortcuts is using the Pampered Chef Deluxe Stand Mixer to mix ground meat. Instead of getting your hands messy, simply select the Mix preset and let the mixer do the work in about 45 seconds. It’s one of those little conveniences that makes dinner prep much easier.
Make Even-Sized Patties
Traditional Salisbury steak is shaped into oval patties. I divided the meat mixture into eight equal portions by cutting it in half, then half again until I had eight pieces.
Don’t worry about making them perfect—they’ll shrink a little as they cook.

If you’re cooking for one or two people like we often are, make the full batch anyway.
You can:
- Freeze uncooked patties for another meal.
- Freeze cooked patties with extra gravy.
- Pull them out for an easy dinner later without starting from scratch.

Prep Everything Before You Start Cooking
This recipe moves quickly once the skillet is hot, so I like having everything ready before I begin.
I sliced my mushrooms with the Rapid Prep Mandoline on the #3 slice setting. It makes quick work of mushrooms, onions, strawberries, sweet potatoes, and so many other fruits and vegetables. I especially appreciate how safe it is to use, making it a great tool if kids are helping in the kitchen.
The Secret to Beautiful Stainless Steel Cooking
I cooked everything in the 4.5-Quart Stainless Steel Sauté Pan, and it was perfect for this recipe.
If you’ve ever struggled with food sticking to stainless steel, here’s the trick:
- Preheat the pan over medium heat.
- Add oil only after the pan is hot.
- Wait until the oil begins to shimmer.
- Add your food.
Once the patties are in the pan, resist the temptation to move them too soon.
If they stick, they’re simply not ready yet.
After about 2–3 minutes, they’ll naturally release from the pan with a beautiful golden crust.
That beautiful browning creates something called fond—those flavorful browned bits on the bottom of the skillet that become the foundation for an incredible homemade gravy.

One of My Favorite Freezer Hacks
You probably already know this about me—I freeze almost everything!
Whenever onions are on sale, I chop several at once and freeze them flat in zip-top bags. Then I can simply break off the amount I need and add them directly to recipes.
No waste.
No tears.
No chopping onions on busy weeknights.
It’s one of the easiest ways I save both time and money in my kitchen.
Making the Mushroom Gravy
After removing the browned patties, the magic begins.
Add:
- Frozen chopped onions
- Sliced mushrooms
- Salt and pepper
As the vegetables cook, they’ll naturally loosen all those flavorful browned bits from the bottom of the skillet.
Next:
- Stir in a little flour and cook for about a minute.
- Slowly whisk in beef broth.
- Add Worcestershire sauce.
- Add a spoonful of barbecue sauce for just a touch of sweetness and depth.
The result is a silky, savory gravy that’s packed with flavor.
Finish Everything Together
Return the patties to the skillet, cover, and simmer over low heat for about 15 minutes.
Since the patties were only partially cooked during browning, this finishing step keeps them juicy while allowing them to soak up all that delicious gravy.
Always check for doneness with an Instant-Read Food Thermometer. Ground beef should reach 165°F before serving.
What to Serve with Salisbury Steak
This meal pairs beautifully with:
