These balsamic glazed Brussels sprouts are an easy side dish that’s perfect any time of year. Roasting brings out their sweetness and gives them those delicious caramelized edges. Add a little balsamic vinegar and maple syrup or honey, and you’ve got a simple way to make this little vegetable shine.
Whether you already love Brussels sprouts or you’re trying them for the first time, this recipe is a great place to start.
Ingredients
- 1 pound Brussels sprouts
- 2 tablespoons olive oil
- 1½ tablespoons balsamic vinegar
- 2 teaspoons maple syrup or honey
- Salt and pepper, to taste
How to Make Balsamic Glazed Brussels Sprouts
1. Preheat the oven
Preheat your oven to 425°F.
2. Trim and halve the Brussels sprouts
Brussels sprouts look like miniature cabbages. If you haven’t prepared them before, trimming them is easy: use a paring knife to cut off the small, tough end of each stem, then remove any loose leaves that don’t look fresh.
Cut each sprout in half lengthwise through the stem so the halves hold together.
3. Toss with the glaze
In a large bowl, combine the olive oil, balsamic vinegar, and maple syrup or honey. I used maple syrup from my parents’ farm, but either sweetener works well.
Add the Brussels sprouts, season with salt and pepper, and give everything a good toss. I prefer mixing in a bowl because it makes it easier to coat all the sprouts evenly.
4. Roast until caramelized
Spread the Brussels sprouts in a single layer on a rimmed baking sheet or an oven-safe stoneware bar pan, placing the cut sides down.
Roast for 20–30 minutes, until tender and starting to caramelize. I love a little char around the edges—that’s my favorite part!
A Quick Note About the Pan
I love roasting vegetables on stoneware and typically use it without parchment. If you’re using a metal pan and prefer easier cleanup, parchment paper can help prevent sticking.
If you’re using stoneware, let it cool completely before cleaning, and follow the care instructions for your particular pan.
Simple Enough for Any Meal
With just a handful of ingredients and a quick toss before roasting, these glazed Brussels sprouts are easy to work into dinner. Serve them hot from the oven and enjoy those sweet, tangy, caramelized bites!
