Breakfast Casserole Loaded with Veggies (Perfect for Meal Prep!)

If you love a hearty breakfast casserole but don’t love recipes that are heavy on bread, you’re going to love this version. This casserole is packed with colorful vegetables, protein, and flavor — and it’s naturally gluten-free, too!

One of my favorite things about this recipe is how flexible it is. You can use whatever vegetables you already have in the fridge or garden, making it a budget-friendly way to reduce food waste and create a delicious meal at the same time.

Whether you serve it for breakfast, brunch, or even “breakfast for dinner,” this is one of those recipes that makes life easier during a busy week.

One thing I love about this recipe is that you can prep components ahead of time.

I often cook the vegetables earlier in the day and refrigerate them separately until I’m ready to assemble everything. You can also fully assemble the casserole the night before and refrigerate overnight.
