If sushi night feels a little intimidating, I want to show you how fun and surprisingly easy homemade California rolls can be. This recipe is interactive, customizable, an reminds me a little of homemade pizza night — everybody gets involved and creates their own combinations.
And the best part?
There’s no raw fish required.
Today I’m using smoked salmon, fresh vegetables, seasoned rice, and a few fun Pampered Chef tools to make homemade California-style rolls that are absolutely perfect for:

One of my favorite things about homemade rolls is how interactive they are.
When all the fillings are prepped ahead:

Step-by-Step Instructions
1. Prep the cucumbers.
Using mini cucumbers, slice them into thin julienne strips.
One important tip:
Lay the cucumber flat in the correct direction when slicing so you get long, thin matchstick pieces perfect for rolls.
You want all the fillings shaped similarly:
* long
* thin
* easy to roll
2. Slice the avocado safely.
To cut the avocado:
* run a butter knife or spreader around the avocado
* twist gently
* squeeze the avocado slightly to release the pit
No dangerous knife-whacking required.
Then slice thin strips directly inside the avocado skin before scooping them out.
Avocado adds such creamy texture to the rolls.
3. Prep the protein.
Traditionally, California rolls use imitation crab meat.
But my family prefers:
* smoked salmon
So I sliced smoked salmon into thin strips instead.
And if seafood isn’t your thing at all?
Teriyaki chicken would work beautifully too.
Keep Everything Organized
Once your ingredients are sliced and prepped, arrange them inside the Snackle Box compartments.

4. Prepare the Sushi Rice.
Lightly brush oil onto the Easy Roll Maker barrel before adding the rice.
Then add:
* about a generous ½ cup cooked rice
to each side.

Keep a small bowl of water nearby while working with sushi rice.
Wetting your hands helps prevent the rice from sticking while spreading it evenly.
5. Add seasoning and fillings.
Place a nori sheet inside and sprinkle lightly with:
before adding fillings.
I love this little flavor boost because the seasoning gets absorbed right into the rice.
Then layer in:
* cucumber
* avocado
* smoked salmon
6. Roll tightly.
Wet the edge of the nori slightly so it seals onto itself.
Then roll tightly.
A serrated knife works especially well for slicing the finished rolls cleanly without smashing them.
I sliced mine into:
* 6 pieces
Easy Homemade Yum Yum-Style Sauce
For a super simple dipping sauce, combine:
* a couple tablespoons mayonnaise
* crunchy garlic crisp seasoning mix
That’s it!
It creates a creamy sauce that tastes very similar to yum yum sauce and works beautifully drizzled over the rolls or served on the side for dipping.

Serve your rolls with:
