Loaded Hummus Platter (with Homemade Flatbread!)

A colorful Mediterranean-inspired appetizer that’s fresh, beautiful, and perfect for sharing.

If you’re looking for an appetizer that feels a little extra special without being complicated, this Loaded Hummus Platter is such a fun option. It’s colorful, fresh, packed with flavor, and honestly just gorgeous on the table.

Traditional hummus is already delicious with a drizzle of olive oil and seasoning, but today we’re taking it up a notch with crunchy vegetables, feta cheese, olives, and warm homemade flatbread for dipping. 

This is the kind of recipe that works beautifully for entertaining, summer gatherings, meal boards, or even a light dinner.

What You’ll Need

For the Loaded Hummus

* Prepared hummus – I like to make it myself using this amazing recipe

* Cucumber

* Tomatoes

* Red onion

* Kalamata olives

* Feta cheese

* Olive oil

* Smoked paprika or za’atar seasoning

For the Homemade Flatbread

* Use my Homemade Pizza Dough recipe!

* Flour

* Melted butter or ghee

* Sesame seeds or garlic (optional)

You can absolutely use store-bought pita chips or pita bread if you want to keep things extra simple.

Step-by-Step Instructions

1. Prep the vegetables.

Start by chopping your toppings. The Rapid Prep Mandoline does some quick work here! I especially love how safe it is to use!

I used mini cucumbers cut into small pieces and sliced tomatoes for lots of color and crunch. 

One tip when slicing tomatoes on the Rapid Prep Mandoline:

Don’t press hard. Let the blade do the work.

A great tip any time I’m using onions that will be served raw: after you’ve chopped/sliced RINSE them briefly under cold water to mellow some of the sharp onion flavor. 

2. Dress the hummus. Doesn’t that sound fun?

Spread the hummus onto a platter or shallow serving dish.

Then add:

* a drizzle of olive oil

* smoked paprika or za’atar seasoning

Honestly, it already looks beautiful at this stage. 

3. Add the toppings.

Now comes the fun part.

Top the hummus with:

* cucumbers

* tomatoes

* red onion

* kalamata olives

* crumbled feta cheese

The toppings add so much texture, color, and freshness. Everything on the platter also works perfectly as a dipper for the hummus itself.

Warm homemade flatbread takes this platter to another level.

I used the same simple dough I often use for:

* pizza crust

* artisan bread

* English muffins

It’s kind of my “magic dough” because it works for so many recipes. 

4. Shape the dough.

Take a small handful of dough and coat it generously with flour since the dough is sticky.

Turn the dough under itself until smooth, then roll it out into a flatbread shape. 

5. Dock the dough.

Use a fork to “dock” the dough before baking.

Docking simply means poking holes into the dough so it doesn’t puff up too much in the oven. For this recipe, we want more of a flatbread texture rather than a pita pocket. 

6. Bake until golden.

Brush lightly with melted butter or ghee if desired.

Bake on a preheated pizza stone at:

* 450°F

The flatbreads bake quickly — mine were perfectly done in about 9 minutes. 

They should be lightly golden and toasty on the bottom.

Serving Tips

These flatbreads are best served warm.

You can:

* tear off pieces for dipping

* serve alongside pita chips

* add extra vegetables for scooping
