Why I Love This Recipe

One of my favorite parts about summer is walking out to the garden and picking dinner.

The zucchini I used came straight from my garden, but don’t worry if yours isn’t producing yet—or if you don’t have a garden at all. Zucchini is inexpensive and available almost year-round, making this an easy meal no matter the season.

It’s also a great way to add vegetables to breakfast while keeping things high in protein.

  • Zucchini, grated
  • Red onion, finely grated
  • Olive oil
  • Feta cheese
  • Eggs
  • Freshly ground pepper (optional)

How to Make Feta Eggs with Zucchini

Grate the vegetables

Start by grating your zucchini. I also grate a little red onion, which cooks quickly and adds wonderful flavor without leaving large onion pieces.

If you’re using a grater or mandoline, don’t skip the food holder—it keeps your fingers safely away from the blades while making quick work of the vegetables.

Cook the vegetables

Heat a little olive oil in a 10-inch Stainless Steel Skillet over medium or just under medium heat.

One of the things I love about this skillet is that there are no rivets inside, which makes cleanup incredibly easy.

Once the oil begins to shimmer, add the zucchini and onion.

The vegetables contain quite a bit of moisture, so they may sizzle and pop a little when they hit the hot oil. That’s perfectly normal—just add them carefully.

Cook until they’re softened and most of the moisture has cooked away.

Add the feta

Spread the vegetables into an even layer across the skillet.

Sprinkle a generous layer of crumbled feta cheese over the top and let it begin to soften and melt into the vegetables.

This is where all the flavor starts coming together.

Crack in the eggs

Using the back of your spoon or spatula, make little wells in the vegetable mixture for your eggs.

Crack the eggs directly into those spaces, cover the skillet, and let everything cook for just a couple of minutes.

The whites should become fully set while the yolks stay exactly how you like them.

I prefer mine soft and runny, but if you enjoy firmer yolks, simply cook them a little longer.

Season and serve

Because feta already adds plenty of salt, I usually skip adding any extra.

Instead, I sprinkle a little crushed red pepper or seasoning of your choice over the top for extra flavor and a pop of color.

Serve immediately with toasted sourdough bread for dipping into those beautiful yolks.
