A Sweet, Savory Twist on the Classic Grilled Cheese
Some of my favorite recipe inspiration comes while traveling. Every time we vacation in Seaside, Florida, we make a stop at a little Airstream called The Meltdown, where they serve some of the most creative grilled cheese sandwiches I’ve ever tasted.
When I got home, I couldn’t stop thinking about those delicious combinations, so I decided to create my own grown-up version.
This Brie, Peach & Basil Grilled Cheese combines creamy brie, juicy fresh peaches, fragrant basil, and a drizzle of homemade hot honey between slices of toasted sourdough. It’s sweet, savory, a little spicy, and perfectly crispy on the outside.

Homemade Hot Honey in Minutes
One of my favorite parts of this recipe is the homemade hot honey.
Instead of buying a specialty bottle at the store, I simply mixed:
- 2–3 tablespoons honey
- 1 teaspoon Pampered Chef Crunchy Garlic Crisp Seasoning
Just stir it together and you’ve got a sweet-and-spicy drizzle that’s wonderful on far more than grilled cheese. Try it on pizza, roasted vegetables, chicken, biscuits, or even avocado toast.
The best part? You can make exactly as much—or as little—as you need.
Fresh Ingredients Make All the Difference
This sandwich is all about simple, quality ingredients working together.
Brie
If you’ve never cooked with brie before, don’t worry—you do not need to remove the rind. It’s completely edible and melts beautifully.
This recipe is also a great excuse to use up leftover brie from another meal instead of letting it go to waste.
Fresh Peaches
Summer peaches bring natural sweetness that pairs perfectly with the rich cheese.
Instead of wedges, I sliced mine very thin so every bite gets just the right balance of flavors. If you prefer wedges – go for it!
Fresh Basil
Fresh basil adds brightness that keeps the sandwich from feeling too rich.
If you happen to have homemade pesto in the refrigerator, that would be another delicious option to spread on the bread.
My Favorite Bread for Grilled Cheese
About every three or four weeks, I bake a large batch of homemade sourdough.
I bake it in a Pullman pan because it creates perfectly square sandwich slices. Then I slice the loaves, freeze them in portions, and simply thaw what I need.
It’s one of my favorite meal-prep habits because fresh bread is always ready when inspiration strikes.
Of course, any sturdy sandwich bread or artisan sourdough will work beautifully in this recipe.
Butter or Mayonnaise?
Everyone seems to have an opinion on this!
Some people swear by mayonnaise for grilled cheese because it creates an incredibly crisp crust.
This time I used softened butter because that’s what I had ready to go—and it turned out wonderfully golden and crispy.
Use whichever you prefer.
Assemble Your Sandwich
Layer your ingredients in this order:
- Buttered sourdough (for exterior of your sandwich)
- Thin slices of brie
- Fresh basil leaves
- Thin peach slices
- Drizzle of homemade hot honey
- Top slice of buttered bread
The aroma alone will have everyone asking when lunch is ready.
Cooking Tips
I cooked mine on Cast Iron over medium heat for about 2 minutes per side.
You could also make this sandwich:
- On an electric grill or griddle
- In an air fryer
The goal is a crispy, golden crust with perfectly melted cheese.
One of my favorite tools for grilled cheese are the Pampered Chef Spatula Tongs. They make flipping sandwiches so much easier without everything sliding apart.
Serving Ideas
This sandwich is wonderful all by itself, but it’s also delicious served with:
- Tomato basil soup
- Fresh fruit
- A simple green salad
- Chips or kettle-cooked potato chips
- Sparkling lemonade or iced tea
It also makes a fun addition to a brunch menu or summer lunch with friends.
