Meal Prepping Chicken for the Freezer (and Make Weeknight Dinners So Much Easier!)

Buy in bulk, prep once, and have flavorful chicken ready whenever you need it.

One of the best ways I save time and stretch my grocery budget is by meal prepping chicken as soon as I get home from the store. It only takes a little extra effort up front, but it makes weeknight cooking so much easier later on.

Today I’m working with a value pack of boneless, skinless chicken breasts and turning them into freezer-ready meal packs with different marinades and flavor options. 

This is one of those practical kitchen habits that really pays off.

Why I Prep Chicken This Way

Most boneless chicken breasts are *huge* these days — and honestly, they don’t cook evenly very well.

If you throw a thick chicken breast on the grill, the outside can dry out before the inside finishes cooking. By slicing them into thinner cutlets, they cook faster, more evenly, and stretch your meat budget further. 

Plus:

* quicker meals

* less waste

* ready-to-cook dinners

* easier meal planning

What You’ll Need

* Boneless, skinless chicken breasts

* Freezer-safe quart bags

* Marinades or sauces

* Close & Cut Set

* cutting board

Suggested marinade flavors:

* Buffalo

* Teriyaki

* Caesar

* Italian

You can also use:

* balsamic vinegar + oil

* dry rubs

* barbecue sauce

* lemon herb marinades

Step-by-Step Instructions

1. Slice the chicken breasts.

Start by trimming and slicing the chicken breasts into thinner cutlets. The Close & Cut Set is excellent to prep chicken quickly!

Some pieces can even be sliced twice to create thinner portions that grill beautifully.

Don’t Waste the Smaller Pieces

The oddly shaped bottom pieces from the chicken breasts are perfect for:

* stir fry

* soups

* pasta dishes

* fajitas

* salads

I like to cut those into chunks and freeze them separately for future recipes. 

That’s another easy way to stretch your grocery dollars.

2. Portion into meal-sized bags.

Next, divide the chicken into freezer bags.

I usually portion mine into roughly:

* 1 pound portions

That amount works well for dinner plus leftovers or lunch the next day. 

Using a kitchen scale makes it quick and easy.

3. Add marinades and seasonings.

Now for the fun part — flavoring the chicken!

I labeled my bags:

* Buffalo

* Teriyaki

* Caesar

* Italian

Then I simply grabbed sauces I already had in my refrigerator door and added them directly to the bags. 

No fancy ingredients required.

4. Massage the marinade into the chicken.

Seal the bags and gently “smoosh” everything together so the chicken gets evenly coated.

Kids actually love helping with this step! 

The chicken marinates while it freezes, which means dinner is practically prepped ahead for you.

Freezer Meal Tip

When you’re ready to cook:

* thaw overnight in the refrigerator

* grill, bake, or air fry as desired

That’s it!

Having chicken already prepped and flavored makes dinner feel so much less stressful on busy nights.

Great for Camping & RV Trips

This method also works wonderfully for camping or RV travel.

Freeze the bags ahead of time, place them into your cooler, and let them thaw gradually in the RV fridge. Then dinner is ready to cook with almost no prep or mess.
