Citrus Herb Salmon & Green Beans in the Pressure Cooker (A Healthy Dinner in Minutes!)

If you’re looking for another delicious way to prepare salmon, this Citrus Herb Salmon & Green Beans recipe is one of my favorites. It’s healthy, low-carb, packed with flavor, and comes together surprisingly fast in the Deluxe Multi-Cooker which is our Electric Pressure Cooker and Ceramic Pot.

What I love most about this recipe is that the entire meal cooks together. The salmon stays tender and flaky while the green beans soak up all those wonderful citrus and herb flavors. Best of all, dinner is on the table in just a few minutes.

Let’s put it together!

What You’ll Need

For the Citrus Herb Butter

  • 2 tbsp butter, softened
  • Zest of 1 orange
  • Parsley
  • Thyme

For the Salmon & Vegetables

  • Salmon fillets
  • 1 package fresh green beans
  • 1 red bell pepper, chopped
  • 1 shallot, chopped
  • 1 tsp avocado oil (or olive oil)
  • ½ tsp salt
  • ½ cup orange juice
  • Salt and pepper to taste
  • ½ tsp dried thyme (or fresh thyme sprigs)

Why I Love Cooking with Citrus Zest

One ingredient that really makes this recipe special is orange zest.

If you’ve never cooked with zest before, don’t skip it! The zest contains concentrated citrus oils that add incredible flavor without making food sour. The bitter part of citrus is actually the white pith underneath the peel—not the zest itself. Our Adjustable Zester make it easy!

It’s one of those small ingredients that makes a big difference.

Step-by-Step Instructions

1. Make the citrus herb butter.

In a small bowl, combine:

  • Softened butter
  • Orange zest
  • Parsley
  • Thyme

Mix until well combined and set aside.

The orange zest gives the butter a bright, fresh flavor that pairs beautifully with salmon and vegetables.

2. Sauté the vegetables.

Set the Deluxe Multi-Cooker to the Sear function.

Add:

  • 1 teaspoon avocado oil
  • Chopped red pepper
  • Green beans
  • Shallot
  • ½ teaspoon salt

Cook for about 6 minutes, stirring occasionally.

Julie’s Tip:

If you don’t have shallots, onions work perfectly well as a substitute.

Make sure your vegetables are nearly as tender as you want them before pressure cooking.

The seafood setting cooks very quickly, so the vegetables won’t have much additional cooking time.

3. Prep the salmon.

While the vegetables are cooking, season the salmon with:

  • Salt
  • Pepper

That’s all you need!

I love buying larger salmon fillets when they’re on sale, portioning them into meal-sized pieces, and freezing them. Then I can thaw exactly what I need for dinner.

4. Layer the ingredients.

Transfer the sautéed vegetables into the Ceramic Pot.

You’ll notice some browned bits on the bottom of the pot. That’s called fond, and it adds wonderful flavor to the finished dish.

Next:

  • Place the salmon directly into the pot.
  • Pour ½ cup orange juice over the salmon.
  • Add ½ teaspoon dried thyme.

Place the wire rack over the salmon and set the Ceramic Pot covered with the Silicone Lid on top of the rack.

5. Add the rack and pressure cook.

Place the cooking rack over the salmon and vegetables.

Secure the lid and select:

  • Seafood setting (defaults at 4 minutes)

That’s it!

One of the things I love about seafood in the pressure cooker is how quickly it cooks.

6. Release the pressure.

Once cooking is complete:

  • Perform a manual pressure release.

Be careful when removing the lid because condensation will collect on top.

I like to tip the lid away from me so excess moisture drips safely away.

7. Finish with the herb butter.

Add about:

  • ½ tablespoon citrus herb butter

to the green beans and vegetables.

The warm vegetables melt the butter instantly, coating everything with bright citrus flavor.

Serve & Enjoy

Using a fish spatula, carefully remove the salmon and serve alongside the vegetables.

This meal is wonderful on its own as a low-carb dinner, but it’s also delicious served with:

  • Brown rice
  • Quinoa
  • Mashed potatoes
  • Wild rice
