Today, I’m going to show you how to make a delicious Chicken, Sun-Dried Tomato & Kale Risotto in the Deluxe Multi-Cooker with almost no babysitting required. This Pressure Cooker does all the hard work, leaving you with a meal that feels fancy enough for company, but easy enough for a weeknight dinner.
Let’s put it together! I adapted the recipe’s cooking vessel to the Deluxe Multi-Cooker because it’s the easiest by far!
What You’ll Need
For the Risotto
- 1 tbsp olive oil (or butter)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 lb boneless chicken, cut into bite-sized pieces
- 3½ cups chicken broth
- 1 cup Arborio rice
- Salt and pepper, to taste
- ½ cup chopped sun-dried tomatoes
- 2 cups chopped kale (or spinach)
- 2 oz Parmesan cheese, grated
Why Arborio Rice?
The secret to creamy risotto is Arborio rice.
Unlike regular rice, Arborio releases starch as it cooks, creating that rich, creamy texture risotto is known for. The best part? The Deluxe Multi-Cooker creates that creamy texture without standing at the stove stirring for 30 minutes!
Step-by-Step Instructions
1. Sauté the onions and garlic.
Set your Deluxe Multi-Cooker to the Sear setting.
Add:
- Olive oil
- Finely chopped onion
- Garlic
Cook for a few minutes until the onion begins to soften and becomes fragrant.

2. Add the chicken, broth, and rice.
Add to the pot:
- Raw chicken
- Chicken broth
- Arborio rice
- Salt and pepper
Give everything a good stir.
One thing I love about this recipe is that the chicken and rice cook together. There’s no need to brown the chicken separately or cook multiple components.
Everything goes into one pot!
3. Pressure cook.
Secure the lid and make sure the silicone gasket is fully seated.
Turn the dial to:
White Rice
The Deluxe Multi-Cooker automatically defaults to 4 minutes, which is exactly what we need.
Press and hold to start.
The cooker will take a few minutes to build pressure before the countdown begins.
4. Release the pressure.
When the cooking cycle is complete, perform a manual pressure release.
Once the red pin drops, carefully remove the lid.
At this point, the mixture may look a little soupy.
Don’t worry!
The risotto will continue to thicken as it rests and as the remaining ingredients are added.
5. Stir in the sun-dried tomatoes and kale.
Add:
- Chopped sun-dried tomatoes
- Chopped kale (or spinach)
The residual heat from the risotto is enough to soften the greens beautifully.
No additional cooking is usually necessary.
6. Add the Parmesan cheese.
Stir in:
- 2 oz grated Parmesan cheese
As the cheese melts, it creates the creamy texture and classic flavor that makes risotto so irresistible.
If you’re serving someone dairy-free, simply scoop out their portion before adding the Parmesan.
That’s exactly what I do so everyone at my table can enjoy the same meal without making two separate dinners.
Let It Rest
Allow the risotto to sit for about 5 minutes before serving.
During this time:
- The rice absorbs additional liquid.
- The Parmesan melts completely.
- The risotto becomes rich and creamy.
