This Asian Broccoli Slaw with Ginger Peanut Dressing has become one of my favorites. I first spotted the recipe on a friend’s website and knew immediately that I had to try it. Between the crisp vegetables, creamy peanut dressing, fresh ginger, and protein-packed edamame, it’s the kind of recipe that tastes like something you’d order from a café.
The best part? It comes together quickly and can be made ahead for easy lunches and dinners.

What You’ll Need
For the Ginger Peanut Dressing
- Honey
- Peanut butter
- Garlic
- Olive oil or avocado oil
- Rice vinegar
- Coconut aminos
- Sesame oil
- Sea salt
- Sriracha (optional)
- Fresh ginger
For the Salad
- Broccoli slaw mix
- Red pepper
- Carrots
- Green onions (scallions)
- Shelled edamame
- Fresh cilantro
- Chopped peanuts for garnish
Step 1: Make the Dressing
Add the following to your Electric Twist & Chop:
- Honey
- Peanut butter
- Garlic
- Olive oil
- Rice vinegar
- Coconut aminos
- Sesame oil
- Sea salt
- Sriracha (if desired)
- Fresh grated ginger
Secure the lid and blend until everything is smooth and well combined.
Julie’s Tip
Fresh ginger is the secret ingredient here. Keep a ginger root in a freezer bag in your freezer and grate it directly from frozen whenever you need it. I love to grate it frozen using the Adjustable Zester
Frozen ginger grates beautifully and lasts for months.
Why I Use Coconut Aminos
Coconut aminos are one of my favorite pantry staples.
They’re:
- Gluten-free
- Soy-free
- Slightly sweeter than soy sauce
- Great in dressings and marinades
I often substitute them anytime a recipe calls for soy sauce.
Step 2: Prepare the Vegetables
One of my favorite prep tools in my 30+ year career is the Rapid Prep Mandoline!
Julienne the carrots and red pepper into thin strips.
For the carrots, I like a fine julienne cut. For the peppers, slightly larger strips give great texture and color.
Slice:
- Green onions
- Cilantro
Then place everything into a large serving bowl.
Julie’s Tip
If you’re trying to save money, you can make your own broccoli slaw using broccoli stems.
Simply peel away the tough outer layer and julienne the stems. It’s a great way to reduce food waste and stretch your grocery budget.
Step 3: Add the Protein
Steam the shelled edamame according to package directions.
You’ll need about 1 cup.
Edamame adds:
- Plant-based protein
- Fiber
- Great texture
- Staying power that turns this salad into a complete meal
Step 4: Assemble the Salad
Add the following to your bowl:
- Broccoli slaw
- Carrots
- Red peppers
- Green onions
- Edamame
- Cilantro
Pour the dressing over the top and toss everything until evenly coated.
At this point, the salad is ready to serve.
Don’t Add the Peanuts Yet!
If you’re making this salad ahead of time, wait to add the peanuts until serving.
That way they’ll stay crunchy and provide the perfect finishing texture.
Coarsely chop the peanuts with the Food Chopper and serve them on the side so everyone can sprinkle on as much as they like.
Make-Ahead Friendly
One of my favorite things about this recipe is that it holds up well in the refrigerator.
Unlike lettuce-based salads that wilt quickly, this broccoli slaw stays crisp for a couple of days.
That makes it perfect for:
- Meal prep lunches
- Potlucks
- Cookouts
- Easy grab-and-go meals
Serving Ideas
This salad is hearty enough to be a main dish thanks to the edamame.
