Why Chicken Thighs?
Chicken thighs are one of my favorite budget-friendly proteins.
They’re:

Using bone-in, skin-on thighs creates an even richer sauce because the skin and bones contribute incredible flavor as they cook.
Step-by-Step Instructions
1. Cook the bacon.
Add chopped bacon to a 4.5 Qt Stainless Steel Sauté Pan over low heat.
Cook until crispy.
Once cooked, transfer the bacon to a paper towel-lined plate.
Don’t clean the pan!
The bacon drippings and browned bits left behind are the foundation of our sauce.
Julie’s Tip
Those browned bits stuck to the bottom of the pan are called fond. They may not look pretty, but they’re packed with flavor and will create an amazing gravy.
2. Season the chicken.
Season both sides of the chicken thighs with Garlic & Herb Rub.
Don’t be shy about seasoning both sides.
The chicken is going to flavor the sauce, and the sauce is going to flavor the chicken.
It’s a beautiful partnership.
3. Sear the chicken.
Increase the heat to medium.
Place the chicken skin-side down into the bacon drippings.
Cook until the skin is deeply golden brown and releases easily from the pan.
Then flip and cook for about one minute on the second side.
Remove the chicken and set aside.
Why Sear First?
Searing creates:
- Crispy skin
- Extra flavor
- More fond
- Richer gravy
It’s worth the few extra minutes.
4. Cook the leeks and garlic.
Add:
- 2 tbsp butter
- Sliced leeks
- Garlic
Cook until softened and fragrant.
The leeks will begin to take on a beautiful golden color as they absorb all those wonderful flavors from the pan.
5. Add the flour.
Sprinkle flour over the leek mixture.
Stir continuously for about a minute.
This helps:
- Cook off the raw flour taste
- Thicken the sauce later
- Create a silky texture
If you need a gluten-free option, gluten-free flour works perfectly here.
6. Deglaze the pan.
Pour in:
- ½ cup white wine
As the wine simmers, use your spoon to scrape up all the flavorful browned bits from the bottom of the pan.
This process is called deglazing and it’s where much of the flavor magic happens.
No Wine?
Simply substitute additional chicken broth.
The recipe will still be delicious.
7. Build the sauce.
Once most of the wine has reduced, add:
- 1 cup chicken broth
- ½ tsp dried thyme
- 1 tbsp Dijon mustard
Stir until everything is combined.
The sauce should smell incredible at this point!
8. Return the chicken to the pan.
Nestle the chicken thighs into the sauce.
Remember, they’re not fully cooked yet—and that’s exactly what we want.
The chicken will finish cooking while braising.
9. Add the spinach.
Pile fresh spinach on top of the chicken.
It may seem like a lot, but spinach cooks down dramatically.
This becomes your built-in vegetable side dish.
10. Braise until tender.
Cover and cook over medium heat for approximately 15–20 minutes.
The exact timing will depend on:
- The size of your chicken thighs
- Your stovetop
- The thickness of the meat
The chicken is done when it reaches 165°F with the Instant-Read Food Thermometer.

Chicken thighs are very forgiving. Even if they cook slightly above 165°F, they stay tender and juicy.
11. Serve and enjoy.
Spoon mashed potatoes onto each plate.
