I made this version using random pasta shapes from my pantry, leftover ricotta from the freezer, Italian sausage from the freezer, and a jar of pasta sauce from the pantry.   • 1 lb Italian sausage
  • 2 cloves garlic
  • 8 oz pasta (any short shape works!)
  • 1 jar pasta sauce

  • Ricotta cheese

  • Mozzarella cheese
  • Green onions, parsley, spinach, or basil
  • Black pepper

Add the Italian sausage and cook until browned, using a Mix ‘N Chop to break it into crumbles.

Let the sausage cook for a minute or two before breaking it up. It crumbles much more easily once it starts to brown.

Step 2: Add the Garlic

Fresh garlic makes all the difference.

Press two cloves directly into the skillet with the Garlic Press and stir into the sausage.

If you’re new to cooking, remember:

  • A garlic bulb contains multiple cloves.
  • This recipe uses two cloves.

Fresh garlic adds incredible flavor and is one of the most economical ways to season your meals.

Step 3: Add the Pasta

Here’s where this recipe gets fun.

Instead of lasagna noodles, use whatever pasta you have on hand. I combined several different shapes from my pantry and simply weighed out 8 ounces total.

Pour the pasta directly into the skillet.

This is a great pantry-cleanout recipe. Bow ties, penne, rotini, shells—almost any short pasta shape will work.

Step 4: Add Sauce and Water

Pour in:

  • 1 full jar pasta sauce
  • 3 cups water

I like to pour some of the water into the empty sauce jar first and give it a shake. That way I get every last bit of sauce before adding the remaining water to the skillet.

Stir everything together.

Cover and let it simmer until the pasta is tender. Stir every so often and if need add a little more water. KEEP YOUR HEAT LOW! Too much heat and you’ll scorch your meal…we don’t want that!

Step 5: Mix the Cheese Topping

While the pasta cooks, prepare the ricotta mixture.

Combine:

  • Ricotta cheese
  • 1 egg (optional)
  • Parmesan cheese
  • Black pepper
  • Chopped green onions or fresh herbs

Mix until combined.

Freezer-Friendly Tip

I often freeze leftover ricotta cheese in flat portions. When I need it for a recipe like this, I simply thaw it and it’s ready to go.

No waste and no forgotten containers hiding in the refrigerator!

Step 6: Keep an Eye on the Pasta

As the pasta cooks, stir occasionally.

This helps prevent sticking and ensures everything cooks evenly.

You may notice some browned bits on the bottom of the skillet from cooking the sausage. That’s called fond, and it’s full of flavor.

The acidity from the pasta sauce helps loosen those flavorful bits and incorporate them into the dish.

Step 7: Add the Ricotta

Once the pasta is tender, scoop dollops of the ricotta mixture across the top.

Don’t worry about making it perfect.

As it warms, the ricotta softens and spreads throughout the skillet.

Sprinkle mozzarella cheese over the top.

Then add your reserved green onions or fresh herbs for color.

Step 8: Melt and Serve

Place the lid back on the skillet for a few minutes.

The cheeses will melt and become wonderfully creamy.

When everything is hot and bubbly, it’s ready to serve.
