What You’ll Need

For the Croutons

  • Bread ends or leftover bread, cubed
  • 1 tbsp olive oil
  • 1 tbsp Garlic & Herb Rub

For the Soup

  • 1½ cups cooked chicken
  • 2 tbsp Garlic & Herb Rub
  • 1 can diced tomatoes with garlic and onion
  • 3–4 cloves garlic
  • 1 jar spaghetti sauce (about 24 oz)
  • 1½ cups chicken broth
  • 1 oz grated Parmesan cheese

For Serving

  • Shredded mozzarella cheese
  • Homemade croutons
  • Extra Parmesan, if desired

A Money-Saving Kitchen Habit

One of my favorite kitchen tricks is saving bread ends.

Whenever we have leftover pieces from a loaf of bread, I toss them into a freezer bag instead of throwing them away. Before long, I have enough to make homemade croutons, bread crumbs, stuffing, or other recipes.

It’s a simple way to reduce food waste and stretch your grocery budget a little further.

Step-by-Step Instructions

1. Make the croutons.

Place your cubed bread into the Deep Covered Baker

Add:

Toss until evenly coated.

Microwave for 3–4 minutes, stirring every minute.

The result?

Golden, crispy croutons with amazing garlic-herb flavor.

Once finished, remove them from the Deep Covered Baker and set aside.

We’ll use the same dish to make the soup.

2. Prepare the chicken.

Add 1½ cups cooked chicken to your Deep Covered Baker.

I love using the Electric Twist & Chop for this step because it creates perfectly shredded chicken that’s ideal for soup.

3. Add the remaining soup ingredients.

To the baker, add:

  • Garlic & Herb Rub
  • Diced tomatoes
  • Fresh garlic
  • Spaghetti sauce
  • Chicken broth

Stir everything together until combined.

My Favorite Shortcut

After pouring the spaghetti sauce into the dish, add a little chicken broth to the empty jar and shake it.

You’ll capture every last bit of sauce and make cleanup easier too!

4. Microwave the soup.

Cover the Deep Covered Baker with the lid.

Microwave for approximately 11 minutes.

The exact time may vary slightly depending on your microwave.

When finished, carefully remove the baker using oven gloves or hot pads.

The steam will be intense, so open the lid carefully.

5. Add the Parmesan cheese.

Stir in:

  • 1 ounce grated Parmesan cheese

The cheese melts right into the soup, adding richness and that classic Chicken Parmesan flavor.
