Easy Mexican Pizza (A Freezer-Friendly Dinner Ready in Under 20 Minutes!)

Crispy tortillas layered with taco meat, refried beans, cheese, and fresh toppings for a quick family-friendly meal.

If you need a super easy dinner idea that uses pantry and freezer ingredients, this Easy Mexican Pizza is such a fun option. It’s crispy, cheesy, customizable, and honestly one of those meals that makes everybody happy.

The best part?

You can probably make it with ingredients you already have on hand. 

Today I pulled taco meat, tortillas, shredded cheese, and homemade refried beans right from my freezer and turned them into dinner in under 20 minutes.

What You’ll Need

* Flour tortillas

* Refried beans

* Cooked taco meat

* Shredded cheddar cheese

* Enchilada sauce

* Taco seasoning

* Oil for the pan

Optional toppings:

* Diced tomatoes

* Green onions

* Cilantro

* Sour cream

* Black olives

* Jalapeños

This recipe is incredibly flexible depending on what your family likes.

Why I Love Freezer Meal Components

One of my favorite kitchen habits is freezing leftovers and meal components in smaller portions.

For this recipe, I used:

* burger patty from the freezer

* homemade refried beans frozen in “can-sized” portions

* shredded cheese (Yes!  I grate cheese myself and freeze it! It’s budget friendly and always available)

* tortillas

Those little freezer treasures make quick dinners so much easier on busy nights. 

Step-by-Step Instructions

1. Heat the taco meat.

Warm a little oil in a skillet and add your cooked meat.

I used a frozen raw burger patty and seasoned it with:

* Everything But the Taco seasoning

If you have traditional taco meat already made, that works perfectly too. 

Ground beef, turkey, or chicken would all be delicious.

2. Spread the refried beans.

Spread refried beans onto two tortillas.

You can absolutely use canned refried beans, but I love making a big batch in the Deluxe Multi-Cooker and freezing portions ahead of time. 

And if you want to keep this vegetarian, the beans alone make a great filling.

3. Add the meat and cheese.

Top each tortilla with:

* taco meat

* shredded cheddar cheese

The warmth from the meat starts melting the cheese right away. 

Then stack one tortilla on top of the other to create a double-decker Mexican pizza.

4. Add enchilada sauce.

Drizzle a little enchilada sauce over the top.

We prefer:

* green enchilada sauce

But red sauce works beautifully too. 

You don’t need much — just enough for extra flavor.

5. Air fry until crispy.

Place the Mexican pizza into the preheated air fryer.

Mine cooked at:

* about 6 minutes total

I rotated it halfway through cooking for even crispiness. 

The tortillas become crispy while the cheese melts into all those delicious layers.

6. Add Fresh Toppings

Once cooked, top with:

* diced tomatoes

* sliced green onions

* cilantro

* sour cream if desired

I also like adding another light sprinkle of taco seasoning right on top. 

It adds so much flavor.

Serving Ideas

This would be so fun for:

* game day

* sleepovers

* quick weeknight dinners

* casual family movie nights

And everyone can customize their own toppings.

Slice & Serve

Use a pizza cutter to cut the Mexican pizza into wedges just like traditional pizza. 

Crispy, cheesy, quick, and so satisfying.
