Easy Slow Cooker Puerto Rican Pork Roast (Pernil)

Looking for a flavorful family dinner that doesn’t require hours in the kitchen? This slow cooker citrus garlic pork is tender, juicy, and wonderfully simple to prepare.

Fresh orange and lime juices create a bright marinade, while garlic, cumin, oregano, and black pepper give the pork a savory, aromatic flavor. Prepare everything the night before, start the slow cooker in the morning, and come home to a nearly finished meal.

Here’s the recipe

Ingredients

  • 3-pound pork roast
  • 4–6 garlic cloves, peeled and cut into small pieces
  • ½ cup freshly squeezed orange juice, from approximately 2 oranges
  • Juice of 2 limes
  • 1 tablespoon coarse kosher salt
  • 1½ teaspoons ground cumin
  • ½ teaspoon dried oregano
  • Freshly ground black pepper, to taste

Instructions

1. Prepare the pork

Using a paring knife, cut several small slits throughout the pork roast. Push a piece of garlic into each slit so the flavor penetrates the meat as it cooks.

Place the roast in the Home & Away Slow Cooker.

2. Add the citrus and seasonings

Sprinkle the pork evenly with the kosher salt, cumin, oregano, and black pepper.

Juice the oranges and limes, then pour the fresh citrus juice over the roast. Fresh juice makes a noticeable difference here, giving the finished pork a brighter and livelier flavor. Our Citrus Press is ideal for that. 

Cover and refrigerate overnight.

3. Slow-cook the pork

The next morning, place the Home and Away Slow Cooker insert with the prepared pork in the slow cooker base and cook on low for approximately 8 hours.

The pork is ready when it is very tender and pulls apart easily with a fork. For food safety, it should also reach the minimum internal temperature recommended for your particular cut of pork.

4. Shred and finish

Carefully transfer the pork to a large plate or cutting board. Remove most of the cooking liquid from the slow cooker, reserving about 1 cup.

Shred the pork using two forks, discarding any large pieces of fat. Return the shredded meat and reserved liquid to the slow cooker.

Taste and add more salt if needed. Cover and cook for another 30 minutes, allowing the pork to absorb the flavorful juices.

What to Serve With Citrus Garlic Pork

Turn the pork into a complete meal by serving it with:

  • Black beans and rice
  • Fresh tomatoes and cucumbers
  • Roasted or sautéed vegetables
  • Warm tortillas
  • Avocado or guacamole
  • A crisp cabbage slaw

Ways to Use the Leftovers

Whenever possible, squeeze the citrus yourself. Bottled juice works in a pinch, but fresh orange and lime juice provide the liveliest flavor.

Finally, don’t worry if the roast falls apart as you lift it from the slow cooker—that’s a sign it has become beautifully tender.
