Cook once, prep ahead, and make busy weeknights so much easier.
If dinner time tends to feel stressful at your house, I want to introduce you to one of my favorite kitchen strategies: Power Cooking.
The idea is simple:
Cook one big batch of protein, then turn it into multiple freezer meals all at once.
Today I’m using ground beef, but you could absolutely substitute:
* ground turkey
* vegetarian crumbles
* venison
* elk
* ground chicken
With just a little prep, you can stock your freezer with five completely different meals ready for busy nights ahead.
This is one of my favorite things to do for:
* new parents
* college students
* friends recovering from surgery
* camping trips
* busy families
The 5 Meals We’re Making
Using one batch of cooked protein, we’re creating:
* Tacos
* Sloppy Joes
* Beef Stroganoff
* Chili
* Italian Beef
Five dinners. One prep session.
Why I Love Power Cooking
This method:
* saves time
* stretches your grocery budget
* reduces food waste
* makes weeknight dinners easier
* helps avoid takeout
* gives thoughtful meals to others
And once you figure out which meals your family loves most, you can easily double or triple those favorites the next time around.
Step 1: Cook the Protein Ahead
Start by cooking all your ground meat with:
* onions
* garlic
Once cooked:
* drain well
* let it cool completely
I like draining the meat in a colander and even running cool water over it to remove additional grease.
Using leaner meat also gives you more actual protein and less grease overall.
Freezer Bag Tip
Before filling freezer bags:
* fold the tops outward into cuffs
This keeps the edges cleaner and makes filling the bags so much easier.
Meal #1: Tacos
For the taco meal bags, add:
* cooked beef
* salsa
* taco seasoning
* water
That’s it!
And remember:
Taco meat can become:
* tacos
* nachos
* burritos
* taco salads
So one freezer meal can turn into multiple dinner ideas.
Meal #2: Sloppy Joes
For sloppy joes, combine:
* cooked beef
* ketchup
* apple cider vinegar
This mixture also works beautifully:
* over baked potatoes
* on buns
* over rice
Such an easy comfort meal.
Meal #3: Beef Stroganoff
For stroganoff, combine:
* cooked beef
* sliced mushrooms
* cream of mushroom soup
* water
* paprika
* pepper
The mushrooms may look like a lot at first, but they cook down beautifully because they contain so much water.
When ready to serve:
* cook egg noodles
* warm the stroganoff mixture
* combine and enjoy
Meal #4: Chili
For chili, add:
* cooked beef
* chili beans
* diced tomatoes
* tomato paste
* chili seasoning
This chili works wonderfully:
* as a soup
* over baked potatoes
* on hot dogs
* over nachos
I also shared one of my favorite kitchen tips in this section:
Avoid pulling tabs off cans whenever possible because sharp can edges can damage your scrapers and tools.
Meal #5: Italian Beef
And finally:
Italian Beef — probably my family’s favorite of the bunch.
For this freezer meal, combine:
* cooked beef
* sliced peppers
* onion soup mix
* red wine vinegar
* water
Yes, the raw peppers soften during freezing, but that actually works perfectly for this recipe.
When ready to serve:
* warm the mixture
* top with provolone or mozzarella
* serve in hoagie rolls
Or skip the bread entirely for a lower-carb option.
The Secret to Better Freezer Meals
Once your meals are assembled:
* squeeze out as much air as possible
* flatten the bags before freezing
Flattened meals:
* freeze faster
* thaw faster
* stack neatly later like files in your freezer
And don’t stack all the meals on top of each other immediately while freezing — spread them out first so they freeze evenly.
Double-Bagging Is Worth It
I also like double-bagging the meals.
Why?
Because the outer bag stays clean and gives you a place to tuck:
* cooking instructions
* serving suggestions
* ingredient reminders
Especially helpful if gifting meals to someone else.
Camping Tip!
These freezer meals are amazing for camping trips.
Freeze them ahead of time and use them as ice packs in your cooler. Then simply reheat over:
* a camp stove
* grill
* cast iron pan
* campfire
So smart and so convenient.
