Step 1: Make the Egg Mixture
In a bowl, whisk together:

Go easy on the salt. Cottage cheese, cheddar and breakfast meats already add some saltiness, so you won’t need much.
One of my favorite things about cooking is that once you learn a few basic techniques, you don’t always have to measure everything exactly. A little eyeballing works just fine here!
Step 2: Prep Your Fillings
I’m using leftover bacon today, but you can easily substitute:
- Breakfast sausage
- Chicken breakfast sausage
- Ham
- Turkey bacon
Add your cooked bacon and sliced green onions to a bowl and have them ready to go.

Step 3: Heat the Skillet
Heat a 12-inch Stainless Steel Skillet over medium-low heat.
Add a small drizzle of olive oil.
Since my bacon was already cooked, I wanted just a little extra oil to help prevent sticking and keep everything cooking evenly. If you have a little bacon fat in your fridge that works, too and adds nice flavor! Add your eggs & veggies and cook them just until set. Remove from pan and either wipe your pan or go ahead and wash it quickly to finish the next step.
Step 4: Build the Quesadillas
Lay the tortillas into the skillet, overlapping slightly if needed.
Important Tip
Add the cheese first!
Sprinkle shredded cheddar directly onto the tortilla before adding the eggs.
This helps create that wonderful melty layer on the bottom.
Next add:
- Egg mixture
- Bacon
- Green onions
- More cheese
Spread the eggs gently so they cover the surface evenly.

I keep tortillas and shredded cheese in the freezer all the time.
Simply pull them out and let them thaw while you’re prepping dinner. Having ingredients ready to go makes meals like this incredibly easy.
Step 5: Fold and Cook
Fold the tortilla over the filling.
Cook for about 1½ minutes.
Then carefully flip and cook another 1½ minutes on the second side. Try our Spatula Tongs to make it easy!
If you like extra crispy quesadillas, simply leave them a little longer.
You’re looking for:
- Golden brown tortillas
- Melted cheese
- Fully cooked eggs
Step 6: Slice and Serve
Transfer the quesadillas to a cutting board.
Cut each one into wedges.
I usually cut mine into thirds, but you can make smaller wedges if you prefer.
The smell at this point is absolutely amazing!
