Chicken Harvest Bowls (A Healthy Meal Prep Dinner Everyone Can Customize!)

This hearty Sweet-Green-inspired bowl is packed with protein, grains, kale, apples, sweet potatoes, and tons of flavor.

If you’re trying to eat healthier without feeling like you’re eating “diet food,” these Chicken Harvest Bowls are such a satisfying option. They’re colorful, filling, packed with texture, and easy to customize for everyone in your family.

This recipe is inspired by a Sweet-Green copycat recipe, but honestly, the best part is how flexible it is. You can swap proteins, change grains, adjust toppings, and even meal prep the components ahead for easy lunches and dinners during the week. 

This is the kind of healthy eating that actually feels realistic for busy families.

Optional swaps:

* Spinach or romaine instead of kale

* Butternut squash instead of sweet potatoes

* Different proteins like steak, salmon, or tofu

* Dairy-free by skipping the Parmesan

Why Kale Works So Well Here

Kale is one of those hearty greens that holds up beautifully in meal prep bowls.

Because it’s tougher than lettuce, you want to slice it very thinly and then “massage” it with your hands to soften the texture and make it easier to eat. 

It may sound funny, but it really works!

And if your family doesn’t love kale, you can absolutely substitute spinach or romaine instead.

TIP: Prep the Apples Last.

The Apple Wedger is a great help!

I recommend dicing the apples right before serving so they stay fresh and don’t brown.

If you need to prep them ahead of time, toss them lightly with lemon juice to help preserve their color. 

I used Honeycrisp apples because they add such a nice sweet crunch against the savory ingredients.

I cooked extra rice using Deluxe Multi-Cooker intentionally so I could freeze leftovers for future bowls later on.

That’s one of my favorite meal prep tricks.

The sweet apples paired with the savory chicken and roasted vegetables create such a delicious balance of flavors.
