If you’re looking for a fast dinner that’s packed with flavor, these Shrimp Quesadillas deserve a spot on your menu. They’re perfect for Taco Tuesday, busy weeknights, or anytime you’re craving something delicious without spending hours in the kitchen.
One of the things I love most about this recipe is how flexible it is. You can use shrimp, chicken, steak, or whatever leftovers you happen to have on hand. Today we’re using shrimp, and they cook so quickly that dinner is on the table in no time.

What You’ll Need
- ½ lb peeled and deveined shrimp, thawed
- 1 bell pepper, finely chopped
- Onion, finely chopped
- 1–2 cloves garlic
- 1 tbsp taco seasoning
- Avocado oil
- Flour tortillas
- Shredded cheese
- Optional toppings: guacamole, salsa, sour cream, rice
Step 1: Prep the Vegetables
Start by finely chopping your onions and peppers.
I used my Food Chopper to make quick work of the vegetables. One thing I still love about this tool is that the blades rotate every time you press down, creating a nice even chop.
For the garlic, simply press it right through the skin using a Garlic Press. No peeling required!

Step 2: Sauté the Vegetables
Heat a 12-inch Stainless Steel Skillet over medium heat and add a small amount of avocado oil.
Avocado oil is great for sautéing because it has a high smoke point and handles heat beautifully.
Add the peppers, onions, and garlic to the skillet and cook for about a minute until they begin to soften.
Step 3: Cook the Shrimp
Add the shrimp to the skillet along with about a tablespoon of taco seasoning.
You can use your favorite store-bought blend or mix up your own seasoning or try our Everything Taco Seasoning.
Cook the shrimp just until they turn pink and opaque.
Julie’s Tip
When using frozen shrimp, thaw them completely and pat them dry with paper towels first. Removing excess moisture helps them cook better and develop more flavor.
Remember that shrimp cook very quickly. As soon as they’re pink and opaque, they’re done!
Food Safety Reminder
If you’ve been using a utensil to handle raw shrimp, make sure to wash it before using it again.
It’s a simple step that helps keep your kitchen safe and healthy.
Once the shrimp are cooked, transfer them to a plate and set them aside.
Step 4: Assemble the Quesadillas
After cleaning your skillet, place tortillas into the pan, folding space in mind since they’ll be folded in half.
Start by adding shredded cheese to one side of each tortilla.
Next, divide the shrimp and vegetable mixture between the tortillas.
Then top everything with more cheese.
Julie’s Tip
I keep tortillas and shredded cheese in my freezer all the time. It’s one of those simple habits that makes it easy to pull together quick meals without an extra trip to the grocery store.
Step 5: Fold and Cook
Fold the tortillas over and gently press them down.
Cook for about 1½ minutes on each side until the tortillas are golden brown and the cheese is melted.
If you have a Cast Iron Grill Press, it helps keep everything together while cooking, but it’s completely optional.
Step 6: Slice and Serve
Once the quesadillas are golden and crispy, transfer them to a cutting board.

I like to start cutting from the folded side toward the open edge. It helps keep all those delicious fillings from spilling out.
Serving Ideas
Serve your shrimp quesadillas with:

Or skip the tortilla entirely and serve the shrimp mixture over coleslaw or lettuce for a fresh taco salad.
